I'm from Rajasthan. When I moved to Bangalore in 2016, I fell for the city quickly — but there was one thing I couldn't find anywhere: North Indian food that tasted like home.
I'd go looking for the flavours I grew up with and come back disappointed, again and again. Somewhere in that homesickness, an idea took hold — if I couldn't find it, maybe I'd have to build it myself. That was the day Desi Chef began, years before it ever had a kitchen.
Today, Desi Chef is a pure-vegetarian North Indian restaurant on Thanisandra Main Road — made for everyone who knows exactly the kind of food I was missing.
North Indian cooking, done properly, is patient cooking. Gravies built slowly instead of rushed. Spices toasted and ground for their moment. Dough rested, and breads pulled hot from the tandoor. None of it is glamorous, and most of it happens where you'll never see it — but you taste it in every bite. That patience is the difference between food that simply fills you and food that takes you home.
Coming from Rajasthan, vegetarian food was never a compromise for me — it's a proud, generous tradition, and that's exactly how we cook it here. Nothing held back.
We wanted the room to match the plate: warm, welcoming, the kind of place you'd bring your family on a Sunday or stay a little longer than you planned to.
